RECIPE: Cranberry-Orange White Chocolate Chip Cookies

"You might not think of cranberries as a category for innovation. After all, it’s a superfruit that should be eaten often.

Decas Cranberry Products, a third-generation family business located in the heart of Massachusetts’ cranberry country, wants to help. Its products are available at retail under the Paradise Meadow brand: a line of all natural, non-GMO, sustainably-farmed cranberries."

US cranberry numbers down on last year

"The fresh cranberry harvest began in mid-September after a short delay of one week," said Parker Mauck, of Decas Cranberry Products in Massachusetts. "October is the busiest month and the harvest is reaching its peak now. We've had excellent weather in the lead-up to the ripening. However, in the early stages of the harvest, we had some cloudy weather and warmer nights which caused that slight delay."

Paradise Meadow Cranberries

Paradise Meadow Cranberries

I am a baking machine these days; the kids love it and we are gonna be the envy of the PTA bake sale. I was thrilled to spend this past Saturday creating festive Cranberry White Chocolate Haystacks and White Chocolate Cranberry Chews. One recipe was a “no bake” which we will no doubt recreate in my kid’s classroom this coming week and the other was super yummy easy to bake recipe. Both contained Paradise Meadow’s Cooking & Baking Cranberries; 2 kinds (Julienne and Whole) depending on your recipe need. These are fat-free, gluten-free and all-natural which speak my “mommy language”. The sky is the limit; cookies, muffins, loaves!

Cranberry White Chocolate Rosemary Cookies with Decas Cranberries

Cranberry White Chocolate Rosemary Cookies with Decas Cranberries

I’m very happy with how these cookies turned out – they are a riff on an oatmeal cookie found in my book, and the rosemary adds so much flavor. They are a perfect addition to your holiday table – stacked up next to pumpkin pie on Thanksgiving, or piled high on a plate next to the tree, waiting for Santa.

Vegan Cranberry Crumble Bars with Chia Seed Jam

When I decided to team up with Decas Cranberry for a delicious cranberry recipe, it took me forever to decide what to make. I went back and forth between raw vegan cranberry cheesecake, cranberry orange loaf, cranberry waffles, maple cranberry sauce and on and on and on. There are just so many amazing things you can create with cranberries! I love the tartness they bring to sweet dessert recipes.

maple cranberry braised pork

Have you guys every braised pork before? If so, you probably know where I’m going with this. If not, ummmmmm SRSLY TRY IT! Before conceiving the idea for this recipe, I’d never actually braised anything. Ever. But I have a great pan for doing so, and this recipe popped into my brain as I was thinking up great ways to use Decas Cranberries, and OMG IT WAS SO SOFT AND DELICIOUS! I’m a total braising convert now.

coconut cranberry bread // coffee glaze

coconut cranberry bread // coffee glaze

Every year for as long as I can remember my Aunt Nancy makes Cranberry Bread for Thanksgiving, Christmas + Easter, her cranberry bread is the anchor among the cream cheese filled celery sticks and olives that serve as our pre dinner snack alongside bowls of "crack your own" nuts and cashews. For 20 years I thought her cranberry bread was homemade......people, I was deceived. Our entire family was deceived, our beloved cranberry bread was from a box. I was heartbroken.

Monday, October 10: Main Streets and Back Roads: Cranberry Country

Massachusetts is the one of the country's largest commercial cranberry producers with more than 14,000 acres of working bogs, many of those on the Southeast Coast. And fall is one of the best times to explore this Cranberry Country. We’ll meet a second generation grower bringing innovation to the industry, drop in on a Wareham bed and breakfast with an interesting tie to Channel 5, and check out some local theatre. Plus, we visit the state’s only archeology museum, home to artifacts that go back 12,000 years. And we shop a country store that sold for 25 dollars in 1828, and is still run by the same family generations later.

Check Out the 13th Annual Cranberry Harvest Festival

There’s a reason cranberry sauce has been gracing Thanksgiving tables for so long. Cranberries have a rich history in the Bay State, dating beyond even the days of the Pilgrims. Native Americans prized the tangy, tart berry for its medicinal qualities and basic sustenance. Now, cranberry bogs in Massachusetts account for 30 percent of the global cranberry acreage and nearly 7,000 jobs locally. So it’s only fitting that there’s an entire weekend devoted to the celebration of Massachusetts’ state berry.

What’s New in Cranberries

What’s New in Cranberries

This time of year, we reach for dried cranberries because they give dishes an autumnal feel. Paradise Meadows has made using them more convenient and tastier with two new products: their Cooking & Baking Cranberries and their Whole Jumbo Cranberries. The former come precut in a julienne, which means no more dealing with the sticky task of chopping them. Look for them in the baking aisle. The latter, with their larger size and supple texture (thanks in part to a different processing procedure), are perfect in salads and stuffings (or for topping our cornbread French toast). Look for them in the baking aisle or where other dried fruit is sold.

A Growing Legacy

A Growing Legacy

Each autumn, cranberry bogs across the South Shore turn a vibrant crimson, ushering in the annual harvest season. The tart little berries are native to New England. The earliest record of cranberry cultivation dates to 1816 when a man named Captain Henry Hall, of Dennis, noticed that the wild cranberries in his bogs grew better when sand blew over them. Captain Hall began transplanting his cranberry vines, fencing them in and spreading sand on them. This year marks the 200th anniversary of cranberry farming in Massachusetts.

Oh, Right! It’s January…Time To Get Healthy

Food is one of those rare topics that elicits an emotional response regardless of age, gender, or ethnicity. I should’ve gotten the salad. How many calories is in this? I’m starting my diet tomorrow. No one is immune to a relationship with food, not even your favorite athlete or celebrity. We all have some type of daily interaction with our plates, and quite frankly a perfect relationship with food doesn’t exist (don’t let the Tom and Gisele’s of the world fool you, they too think heavily about every bite).
