Serving: 3 Salads


3 cups freshly chopped kale

1/4 cup of dried cranberries

1/4 cup of chopped pecans

1/2 Granny Smith apple, sliced

1/3 cup crumbled feta


  1. In a medium sized bowl, place chopped kale, drizzle with olive oil and a pinch of salt. Massage for 2-3 minutes until kale starts to soften and wilt.
  2. Add dried cranberries and pecans, and mix. Place sliced apples on top and sprinkle with crumbled feta.
  3. Serve with a vinaigrette of your choice and enjoy!
