• ½ cup walnuts, chopped
  • ½ cup almonds, chopped
  • 1 cup pitted Medjool dates (approx. 11), chopped
  • 1⁄3 cup plus 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¼ cup baking cranberries
  • ¼ cup mini dark chocolate chips


1.Line a 13 x9 baking sheet with parchment paper and set aside.

2.Grind the walnuts and almonds in a food processor, until a dough starts to form. Add the dates, cocoa powder, coconut oil, vanilla and salt and pulse until a soft dough forms.

3.Place the dough into a bowl and add cranberries and chocolate chips.  Combine this mixture with your hands, then roll the dough (1 tablespoon) into a round ball and place on the baking sheet. 

4.Continue rolling the balls by the tablespoon until all the dough is rolled.

5.Place in the fridge for at least an hour, then enjoy!
